How to Make Coconut milk and Oil

In this video friends in Pohon Batu teach us how to make coconut oil.

When making coconut oil, we first need to make coconut milk.
(Shreds can be dried and kept or used fresh in Sambal mixed with lime, fresh chili and sugar.)

Ingredients for about 3L of oil

  • 20 old coconuts
  • Approximately 10L of water
  • 1-2 tbsp. of salt to help preserve

Other Items

  • Machete for husking
  • Huge Bowl, bucket or basin
  • Coconut Shredder
  • Cloth to wring out shreds (Cotton works well)
  • Wok for cooking
  • Bottles to store oil

How to make coconut milk and oil step by step

1 Collecting

For coconut milk and oil, old coconuts are used. Old coconuts are identified by their brown and fibrous husk and can be found at the foot of the coconut palms.
Yellow/brown coconuts picked from the palm can also be used as long as the flesh inside is thick and hard.

2 Husking

Husk the coconut shell using a machete. If using a powered shredder, knock off the shell leaving the flesh bare. If shredding by hand, cut the coconut in half.

3 Grating

If you do not have one of these fancy grating machines, you can use a manual coconut scraper which clamps to the table, do it by hand using a toothed scraper attached to a board/bench upon which you sit on, or use a blender.

4 Making the milk

Place grated coconut in a basin or big pot, add approx. 10L of water. Wring out coconut so water turn milky. Once well mixed, wring out the shreds using a cloth and discard shreds.

5 fermenting

Leave milk in pot with lit at room temperature overnight to ferment and separate.

6 Skimming

Using a ladle, carefully skim the oil of the top of the basin into wok.

7 Cooking

Cook oil for at least half an hour or until the ‘dregs’ have solidified into little lumps and the oil looks clear. Pour through a sieve and leave to cool before bottling.

8 Bottling

Bottle oil and add a bit f salt to help preserve it. It will last at room temperature for at least a month.
